  • 2 ½ cups shredded sharp Cheddar cheese, divided

  • 4 cups milk
  • ½ teaspoon dry mustard
  • ½ teaspoon salt
  • 1 pinch ground black pepper
  • 1 cup half-and-half cream
  • ½ teaspoon ground nutmeg
