  • ⅓ cup shiitake mushrooms, stems discarded, caps thickly sliced
  • ½ shallot, sliced
  • 1 clove garlic, peeled
  • ⅓ cup dry white wine
  • ⅓ cup beef broth
  • ¼ cup butter, cubed
  • 2 tablespoons chopped fresh tarragon

  • Season steak with salt and pepper on both sides.
