  • 1 (4 ounce) package Idahoan® Roasted Garlic Flavored Mashed Potatoes, dry
  • 2 tablespoons olive oil
  • 1 yellow onion, chopped
  • 2 stalks celery, chopped
  • 2 carrots, chopped
  • 2 (32 fluid ounce) containers vegetable stock
  • 1 smoked ham bone
  • 2 (14.5 ounce) cans white beans, rinsed and drained
  • ½ bunch parsley, chopped
  • Salt and pepper to taste
