  • 1 cup long grain white rice
  • ¼ cup extra-virgin olive oil
  • 4 cloves garlic, pressed
  • 1 tablespoon ground paprika

  • ½ cup plain yogurt
  • salt and ground black pepper to taste
  • 4 (5 ounce) fillets tilapia
  • 1 (15 ounce) can chickpeas, rinsed and drained
  • 2 medium Roma tomatoes, coarsely chopped
  • 1 cup chopped fresh cilantro, divided

  • Preheat the oven to 400 degrees F (200 degrees C). Line a large, rimmed baking sheet with parchment paper.
  • Bring water and rice to a boil in a medium saucepan. Cover and reduce heat to low. Simmer until tender, about 20 minutes.
