  • 1 medium head garlic, top of bulbs trimmed off so tops of cloves are exposed
  • 1 tablespoon olive oil
  • 2 pounds russet potatoes, peeled and quartered
  • 4 tablespoons butter, softened
  • ½ cup milk
  • salt and pepper to taste
