  • 3 pounds pork loin, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 sweet onion, chopped
  • 2 cloves garlic, minced
  • 1 ⅓ cups chicken broth
  • 1 cup dry sherry
  • 3 pounds sweet potatoes, cut into 1-inch cubes
  • ¼ teaspoon ground black pepper
  • ¼ teaspoon crushed dried rosemary
  • ¼ teaspoon thyme

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a large casserole dish or Dutch oven with cooking spray.
  • Place Dijon mustard in a bowl. Combine brown sugar and flour in a second bowl. Coat pork cubes with Dijon, then toss in brown sugar-flour mixture to coat.
