  • ¼ cup diced onion
  • 1 pound boneless, skinless chicken breasts, cut into bite-size pieces
  • 1 (5.4 ounce) package Knorr® Fiesta Sides™ - Mexican Rice
  • 1 (15 ounce) can reduced-sodium black beans, rinsed and drained
  • 1 cup shredded Monterey Jack cheese
  • ½ cup pico de gallo

  • Heat 2 tablespoon olive oil over medium high heat; add onions and cook and stir until they start to soften, 3 or 4 minutes.
