  • 4 large russet potatoes
  • ¼ cup olive oil
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 ½ teaspoons chili powder
  • 1 ½ teaspoons curry powder
  • 1 ½ teaspoons ground coriander seed
