  • 2 pounds meaty oxtail pieces
  • 4 cups water, or as needed
  • 1 (8 ounce) package shiitake mushrooms, sliced
  • 1 cup chopped green onions
  • ½ cup chopped onions
  • 5 cloves garlic, chopped
  • 2 (1 inch) pieces fresh ginger, chopped
  • 4 large bay leaves
  • ½ cup dry white wine
  • ¼ cup shoyu (Japanese soy sauce)
  • salt and ground black pepper to taste
  • 1 bunch Chinese mustard greens, chopped
  • 2 tablespoons chopped fresh cilantro, or to taste

  • Place oxtails in a pot and cover with water; boil for 30 minutes.
