Ingredients

  • cherry wood chips
  • 12 fresh oysters in shells, rinsed and scrubbed clean
  • 2 pinches salt
  • 1 tablespoon Worcestershire sauce, or to taste

  • Preheat an electric smoker to 225 degrees F (110 degrees C). Add wood chips according to manufacturer's directions.
  • Shuck oysters to remove top shells. Pour oysters and juice (liquor) into a bowl; add salt and let marinate for 20 minutes. Discard top shells and wash and save bottom shells.
  • Drain oysters and discard juice. Place each oyster into a clean bottom shell.
  • Place shells directly onto the grate of the preheated smoker; smoke for 1 1/2 hours.
  • Remove oysters and shells from the smoker and set on a platter. Top each with a dash of Worcestershire sauce and serve.
