  • 1 pound boneless pork shoulder, cubed
  • 2 tablespoons butter
  • 1 red onion, diced
  • 2 cloves garlic, minced
  • 1 shallot, minced
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 teaspoons dried basil
  • 1 teaspoon salt
  • ½ teaspoon ground black pepper
  • 1 pound new potatoes, cut into 1/2 -inch cubes
  • 2 cups dry red wine
  • 2 (14 ounce) cans beef broth
  • 1 large Granny Smith apple - peeled, cored and diced

  • Heat oil in a Dutch oven over medium-high heat. Place flour into a medium bowl. Add cubed pork; toss until coated, then shake off any excess flour. Cook and stir pork in hot oil until browned on all sides. Remove to a plate and set aside.
