Tender Slow-Cooked Pot Roast with Vegetables

If you're looking for a hearty and delicious meal that practically cooks itself, this tender slow-cooked pot roast with vegetables is the perfect choice. This classic comfort food is packed with flavor and will leave your home smelling amazing as it simmers away in the slow cooker.

Ingredients:

  • 3-4 pound chuck roast
  • 1 onion, chopped
  • 4 cloves of garlic, minced
  • 3 carrots, peeled and chopped
  • 3 celery stalks, chopped
  • 2 cups beef broth
  • 1 cup red wine (optional)
  • 2 tablespoons tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • 3 tablespoons olive oil

Instructions:

To begin, season the chuck roast generously with salt and pepper. In a large skillet, heat the olive oil over medium-high heat. Once hot, add the chuck roast and sear on all sides until browned, about 3-4 minutes per side.

Next, transfer the seared chuck roast to the slow cooker. In the same skillet, add the chopped onion, garlic, carrots, and celery. Sauté for 5-6 minutes until the vegetables start to soften. Then, add the tomato paste and stir to coat the vegetables.

Transfer the sautéed vegetables to the slow cooker and nestle them around the chuck roast. Sprinkle the dried thyme and rosemary over the roast and vegetables. Then, pour in the beef broth and red wine, if using. The liquid should come about halfway up the side of the roast.

Cover the slow cooker and cook on low for 8-10 hours or on high for 5-6 hours, or until the meat is fall-apart tender.

Once the cooking time is up, carefully remove the chuck roast from the slow cooker and transfer it to a serving platter. Use a slotted spoon to remove the vegetables and arrange them around the roast. Cover everything with foil to keep warm.

To make a delicious gravy, strain the cooking liquid from the slow cooker into a saucepan. Skim off any fat and bring the liquid to a simmer. In a small bowl, mix together 2 tablespoons of cornstarch with 2 tablespoons of cold water. Pour this slurry into the simmering liquid and whisk constantly until the gravy thickens, about 3-4 minutes.

Serve the pot roast and vegetables with the rich gravy drizzled over the top. This tender, slow-cooked pot roast with vegetables is sure to become a family favorite and is perfect for a comforting weeknight dinner or a special Sunday meal.

Enjoy the amazing flavors and aromas of this classic dish--with the added bonus of minimal effort thanks to your slow cooker!
