Moroccan Lamb Tagine

Instructions:

To start, season the lamb chunks with salt and pepper. In a large tagine or Dutch oven, heat some olive oil over medium-high heat. Add the lamb in batches and cook until browned on all sides. Remove the lamb from the pot and set it aside.

In the same pot, add the chopped onions and cook until they are soft and translucent. Add the minced garlic and cook for another minute. Then, add all the ground spices – cumin, coriander, cinnamon, ginger, paprika, and cayenne. Stir well to coat the onions and garlic with the spices.
