Authentic Mexican Tacos al Pastor

The History of Tacos al Pastor

Tacos al Pastor are a delicious and iconic dish in Mexican cuisine that have a rich history and a unique flavor. This traditional street food originated in central Mexico, and it is inspired by the shawarma meat brought by Lebanese immigrants in the early 20th century. Over time, Mexicans adapted the recipe to their own tastes, using pork instead of lamb and adding local spices and seasonings. The result is a mouthwatering combination of tender, marinated pork, fresh toppings, and a soft corn tortilla.

Ingredients

For the Pork:

  • 2 pounds of pork shoulder, thinly sliced
  • 1 onion, chopped
  • 3 cloves of garlic, minced
  • 2 tablespoons of achiote paste
  • 1 tablespoon of dried oregano
  • 1 tablespoon of ground cumin
  • 1 tablespoon of paprika
  • Salt and pepper to taste

For the Toppings:

  • 1 pineapple, sliced
  • 1 onion, finely chopped
  • Fresh cilantro
  • 1 lime, cut into wedges
  • Red or green salsa
  • Warm corn tortillas

Marinade and Preparation

To prepare the marinade, combine the chopped onion, minced garlic, achiote paste, oregano, cumin, paprika, salt, and pepper in a blender or food processor. Blend until you have a smooth, thick paste. Place the pork slices in a large bowl and cover them with the marinade, making sure that each piece is well coated. Cover the bowl and refrigerate for at least 2 hours, or preferably overnight for the best flavor.

Once the pork has marinated, preheat your grill or broiler to high heat. Thread the pork slices onto skewers and place them on the grill. Cook for about 5-6 minutes on each side, or until the meat is charred and cooked through. While the pork is cooking, grill the pineapple slices for a few minutes on each side until they caramelize and develop grill marks.

When the pork is done, remove it from the grill and let it rest for a few minutes. Then, carefully slice the meat off the skewers. Warm the corn tortillas on the grill for a few seconds on each side, and assemble the tacos al pastor by placing a few slices of pork on each tortilla, topping with grilled pineapple, chopped onion, cilantro, and a squeeze of lime juice. Serve with your favorite salsa on the side.
